You can look into a class at your local community college, or check with the American Diabetes Association, as they have a team of educators who hold informational meetings you can attend.
You shouldn't only rely on urine ketone testing as a means to measure blood sugar levels. The cabin's air is a lot drier than normal air is and it can cause thirst, especially in those that have diabetes. You should be able to pass through airport security with water bottles if you can prove that you have diabetes.
