Jarl does end up having the last laugh (so to speak); he thinks. Like Manus and Áesta predicted, Olecastle's priest is able to provide him with a meal once he arrives at the church.
But, Jarl's certain they weren't expecting him to receive something so plentiful as Judas' meal.
It's probably better for at least Áesta to not know about its specifics, though: he loves sheep, after all.

Mutton is actually one of Jarl's favorite foods.
Certainly, he prefers a hearty stew (theirs is usually rabbit and potatoes, but Jarl has had boar, fowl, pork, and beef with various vegetables like carrots, onions, garlic, and peppers; he could have tried horse stew, once, but his parents decided against it when he started crying in the market [he eventually explained, later, that he'd been befriending the horses owned by their neighbor and feared he'd end up eating one of his horse friends; he never knew the rancher raised those horses for more than just riding and traveling...]), but mature sheep roasted (or grilled) in the church's old style brick oven with garlic and lemon and black pepper...
It's delicious.
It's home.

When Jarl was young, before Jasey was even born, he met his grandmother.
She was a traditional Irish woman with bright red hair and brilliant green eyes and a preference for white clothing ("Easier ta clean!" she'd always said). She looked like the Irish flag, living and breathing, even with the splatter of freckles on her face.
The town had loved her.
And Jarl had loved her, too. She was sweet and kind and loving to a fault (some stranger once ran through their town and tried to swindle her; but, when the townspeople heard her crying for him to stop, they came RUNNING; and then that guy really WAS ran through their town--and then right out of it) and she treated him with so much care she was the first person he crafted a present for after learning how to woodwork.
But she wasn't catholic.
True to the meaning of traditional, Sorcha was a Celt and prayed to Pagan gods.

And, YES, Jarl later struggled to reconcile this fact with his own religious beliefs.
Suffice to say: he chose to continue loving her regardless of their differences.
