Horse Saddle bags
Well, there are three most common types of saddle bags:
1) Pommel bags, which are placed over the saddle horn or clipped onto front D-rings. Usually they are big enough to put a small bottle of water (250 ml) in them. Also are safe to use while being mounted (reference for D-ring placement on:

2) Cantle bag, which are placed over the back of the saddle, being clipped onto back D-rings. They are usually larger than pommel bags, so they fit for small cloaks, aid-kits or food better. It is also recommended to put smaller, but heavier items in pommel bags and larger, but lighter (like cloak) in cantle bags.
Also, main materials for these bags are nylon, leather and waxed oilskin.
Canteens for saddles
Well, there are traditional canteens made from lightweight metal. They fit into both bag or special canteen holder or carrier. So, yes, there are certain bags designed to be canteen holders. They look like this:
