Moon Cake Bakers would make a special lotus paste, crack a fresh Duck Egg Yolk into the center and ball it all up in a thin wrapping of special dough. They then place it into wooden molds, pre-carved with intricate patterns, and they shape the Lotus and Egg Yolk Paste into a modern day Moon Cake!
