Okay, this is an exaggeration for comedic effect but the customers at my pizzeria SWEAR by our ranch and order it by the jar. They never ask why it's so good, but the secret that was revealed to me by one of our prep guys is that it's literally 50% mayonnaise. Mystery solved.
I worked at a place where the industrial strength mayo came in an unsealed bag which was just folded over, inside of a cardboard box. Thank you sysco systems.
