I really enjoy making Japanese curry to eat with brown rice. The roux takes awhile to make and quite a bit of patience, but it's definitely worth it. Luckily, after the roux is made and the ingredients are chopped, I can just use a pressure cooker for the rest. My favorite part is the soggy celery and carrots with the soft potatoes. When I wash the dishes afterward, there's always puddles of water on the counter..... ^ ^;;
