[Makes 12 servings]
Ingredients:
*4 large egg whites *900 ml heavy cream
*240g granulated sugar *2 tbsp powdered sugar
*1kg strawberries, diced
Directions:
Preheat oven to 120°C or 250°F. Line a baking tray with parchment.
Whisk egg whites, gradually adding the sugar into three parts (Basically, you’re making a meringue) until stiff peaks form. Spoon dollops of meringue onto baking tray and bake for 60-75 minutes until hard and hollow and peels off the parchment easily. Place on a wired rack and cool completely.
Blended ⅓ of the strawberries to make strawberry sauce. In large bowl, whisk the heavy cream with powdered sugar until soft peaks form.
Crush ¾ of meringues and mix with the chopped strawberries then swirl in strawberry sauce. Plate and decorate with remaining meringue. Serve immediately.
