To me it seems a little strange to hear someone talk so respectfully about someone and then use the honorific "-san". "-san" is for when you're talking about someone of equal status. When you're talking about someone of higher status the standard honorific is "-sama".
It might just be best to skip the honorifics. They can also change depending on what time period the story is set in (old fashioned samurai might call each other or people they respect/of the same high status as them "-dono") or depending on the title or occupation of the person. If you're talking about someone in your group to someone outside your group then, to be humble, you might not use an honorific at all.
