Any eatery ought to be well aware of dietary issues: specifically here, lactose-intolerance or allergies to any of the myriad additives that might be added to mass-produced ‘cheese’. I recently had a McD’s burger allegedly with cheese, but it had melted into a chemical gunk - it was quite disgusting to look at.
