I love nettles, predominantly because butterflies love the as a food/egg plant so they bring lots of species of loveliness to the garden. Locally (UK) we'd use dock as a sting relief, I don't know if they're related to plantain. I've never been brave enough to try cooking with them, maybe this will give me the courage!
