"Flickin' manicou! We should curry yuh!" - a manicou is the general term used when referring to an opossum. Similar to how an avocado may also be called a zaboca in the Caribbean.
AJ is a rat however, so this may be likened to calling a dog a mangy mutt.
'Currying' is essentially cooking something with curry powder, like how things like chicken would be cooked with jerk powder or any other seasoning. Instead of saying the entire 'cook you with curry powder', you would just say 'curry yuh'.
EDIT - Manicou (iguana, cayman etc.) are cooked and eaten in some parts of Trinidad and Tobago a little more often than I'd like to admit. The term for it is wild meat.
