I've had success with herbs before and I've found them very durable and easy to grow. I starting with sage as it's been the easiest to start from seed, takes well to being kept in a container, and tolerates shade. It also has fuzzy leaves which makes for an interesting house plant.
The one that I've already gotten started is Common Sage. I am currently waiting for a seed mix of four different red sages and I'm look forward to buying some wild purple sage.
I've also got two varieties of garlic on the way too in the form of bulbils. That's not a misspelling by the way. Bulbils are basically baby garlic which are formed separately from cloves. The three varieties of garlic I'm going to be working on apparently readily produce seeds compared to other varieties. This is very good for genetic diversity and resilience but it's very hard to garlic to do this now a days. So food and experimental materials.
Garlic:
Estonian Red is a type hardneck garlic that I hope to produce fertile seeds from but it be a few years until the plants will be old enough to reproduce.
