[Makes 16 servings]
Ingredients:
*113g Unsalted butter; +more for greasing *¼ tsp sea salt
*113g Unsweetened chocolate, chopped *2 large eggs, room temp.
*36g instant coffee *122g all-purpose-flour
*338g Sugar * 2 tbsp nat. cocoa powder
*1 tbsp Vanilla
Directions:
Preheat oven to 175°C or 350°F. Grease 8-in pan, line with parchment and butter parchment.
Heat butter, coffee, and chocolate over a bain marie, stirring occasionally until butter & chocolate have melted. Remove from heat and cool slightly. With wooden spoon, beat sugar, vanilla, and salt. Then, add in eggs one at a time, mixing them in well. Add in flour and cocoa powder and mix until well incorporated (~1 min.)
Transfer batter into buttered, smoothing the top. Bake for 30 min or until the toothpick comes out fairly clean with some crumbs on it.
Place pan on a wire rack and cool and serve once cooled and cut.
